Ingredients

  • 1 flax egg (1 tablespoon flaxseed meal + 3 tablespoons water)
  • 1 tsp organic olive oil
  • 1 small white onion diced nice and fine
  • 3 cloves fresh minced garlic
  • 1 large carrot shredded
  • 1 (15 ounce) can organic black beans, rinsed and drained
  • 1/3 cup oat flour ( We grind our own in high-speed blender!)
  • 2 teaspoons cumin
  • ½  teaspoon cayenne pepper
  • 2 teaspoon garlic powder
  • 1-2 teaspoons chili powder
  • 1 teaspoon paprika
  • ½ teaspoon salt (we love Redmond’s real salt!)
  • Freshly ground black pepper to taste

Instructions

  1. First, mix the flaxseed meal and water in a small bowl and place in the fridge for 5-6 minutes for it to fully set and get firm.
  2. Next, place a your Xtrema 10- or 12-inch skillet over low/medium heat for 3 minutes until your pan is nice and hot.  Once your skillet is hot, add 1 teaspoon of olive oil to the bottom of your pan and if not using a spray oil use a basting brush to make sure the entire surface of the pan gets coated.  Once your oil is hot, add in onion, garlic, and carrot and sauté for 5-7 minutes or until onions are translucent and carrots begin to get soft.
  3. Transfer the mixture to a large bowl and stir in all the spices: cumin, cayenne pepper garlic powder, chili powder, paprika, salt and pepper to taste.
  4. Time to add the beans!  Make sure if using canned bean to rinse them in a strainer before adding to blender/food processor.  Using a food processor or high-powered blender, blend black beans until well blended and just a few bean chunks remain ( make sure you don’t leave it on high so it becomes a puree, you want some chunks!)
  5. Add your blended black beans to the bowl with the veggie mixture and then stir in the flax egg and the oat flour. Add more seasonings to your taste and liking currently!
  6. Time to make the burger patties!  This recipe will make 4 burgers, so divide the mixture into 4 sections and pat down to form patty. Place burgers on a platter and cover in fridge for 15-20 minutes to let them firm up.
  7. After 20-30 minutes in the fridge, it’s time to grill these burgers up! ,
  8. Place your Xtrema skillet of choice over low/medium heat and allow your pan to fully heat up for 3 full minutes.  Next,  add a generous spray of oil to the pan with cooking spray or basting brush for pour oil ( both work great!).
  9.  Add the patties and cook 6-7 minutes on each side, or until golden brown and heated through completely!
  10. Place on buns or in a homemade lettuce wrap for a bread free option!
  11. Top your burgers  with tomato, avocado, red onion, Sauté mushrooms the options are truly endless for these savory veggie burgers!
  12. Serve with carrot fries or a salad for a full veggie focused meal!  This recipe makes 4 burgers but feel free to double or triple the recipe and free the burgers for up to 2 months.
  13. Enjoy!
